Baker Jim,

But how does one know when the dough is fully baked? I'm prone to taking it out soon and being left with gummy insides, or leaving it in too long to the point that it becomes dry and crusty.

Are you suggesting setting a timer and taking it out when the timer goes off regardless of its bakedness?
