Apple wood. I go and get the trimmings from the orchards. Little branches perhaps none bigger then 1" diameter. I cut them into about 12" lengths like all of the other wood I use and yes I soak them in water. Want them to smoke not burn. Jeff tip for wood: If in a hurry throw some chips or pieces in water and microwave for a minute or two. Draws the water right into the wood. As for the creative use of a beer can, try it. Think about it: bird being steamed from the inside out and dry heat from the outside in. Great combo!
