any kind of fruit OR nut tree, or at least all that I've come across, can be used in a smoker ...

I keep mine in a divided bin in the garage ....
pieces mostly in the under 2inch dia and less than a 6inches long ....
currently, I have apple, fig, hickory, mesquite, peach, pear, pecan, and plum sticks ready for use after being dried in the six month range *(depends upon the temp and when they are cut)

my personal favs are mesquite and pear ....
I don't care for oak, so I have none .....

all these are readily available in NE Tx, so I'm seldom without ....

I will add to the other answer that any wood other then pine or firs are good IMO. I also like them green but once dry just soak them in a pail of water.

Perhaps it is because there are so many oak in this area but I actually like them. Just need to try many and keep the ones you like I guess. I prefer oak or mesquite on birds, hickory on beef and pork and apple on anything.
