that is one of the "absolute musts" when one of our three children comes to visit ....

I fix them using the pan of water approach while my wife goes the easier method of the tins ...... gggg

try this ...
remove the "hot" softboiled egg from the water ...
roll it on the counter using some pressure to crack the shell in many places .... immediately immerse into chilled water (ice cubes/water mix) for 15-20 seconds ...
peel the shell quickly
and put in the microwave for 10 secs ...

I like the result ...

I have the easiest way to poach eggs.

Need;
small saucepan.
3/4 full with water
bring to a boil.
Use a large spoon, the type with the holes in the bottom to scoop and drain (don't know what you call it)

Crack raw egg into a custard dish,
stir boiling water clockwise (just because) with right hand
pour raw egg in boiling water with the left.
keep the water moving
When egg turns white, about 1 min, depending on how well you want it cooked,
scoop out with large spoon
