Nothing like a little Cajun music to dance to while you cook!!! LOLOL!!

Those are some good Cajun dishes.....Dirty Rice was the first original Cajun dish I had when I lived in LA in the early 70's. I was only 21 years old and the ladies I worked with were always bringing great foods in and feeding the whole place!!

Those gumbo crabs really make the gumbo recipe, IMO. My definition of gumbo crabs is frozen smallish crab bodies without the carapace - you can use fresh, I guess, but gumbo crabs are not boiled first, so you'd have to rip the carapace off a live crab and pull out the gills - I'd rather not! They don't have much meat but they add a lot of flavor to the broth.

I really like about.com - they have good information on a lot of subjects, including cooking - their Southern food section can't be beat - especially the fried chicken section and the barbecue section - the Cajun food sections are good, too.
