Mine is slightly different.

Soak 1 lb dried pea beans overnight.
In the morning rinse three times (reduces the tendency to bloat after eating)
Put in crockpot with 2 cans chicken broth and one ham hock. (Add more water if needed later.) Turn on high.
Later in the morning reduce heat, add chopped celery, carrots and onion, pepper, salt if needed.
I turn it back to high in the afternoon.

I add ketchup to the bowl after the soup has been ladled into it.
