Not all those people are putting groceries on a card that carries over a balance. I use a credit card for just about everything just so I can keep track of all my expenses. The credit card companies have made it really nice by having sites where you can download your statements right into Quicken. I'm one of those anal retentive types that keeps track of every expense. We never pay interest on those accounts because the card is paid within the grace period, I know because I keep a category for interest. Although, I do know people who unfortunately do exactly what you suggest, most people I know are convenience users for those kinds of living expenses.
