The new Palm V (m505) is rumoured to be coming out with 16-bit color and here is a description of the various color depth:

Number of colors displayed:

Technically, the color display capabilities of a display is
measured by the number of bits used to represent each dot on
the screen. To simplify things, this can be converted into the total
number of colors that can be reproduced: a 1-bit image is
monochrome; an 8-bit image supports 256 colors or grayscales;
a 12-bit image supports 4,096 colors, and a 16-bit image has
65,536.
True color (24- or 32-bit graphics) is currently not
supported by any of the major handheld PCs.
