I really don't know much about interior Alaska. Much of it is too wet or rough for off-road vehicles. You might consider taking a snow machine and timing your trip for that. I'm told that is big time up there.

I live in Southeast Alaska in a landlocked town. Off road here means boat. You can't take a jeep much of anyplace.

You might also explore the Cassiar highway on your way north through Canada or on the way back.

You sound like one of my son's buddies. He built a head-turner out of the hulk of the jeep I drove in college. It's a Willys. I hope to get him to help me build one after I retire.

Good luck on your trip. Don't forget the Canadians do not have a Second Amendment and take a dim view of handguns. You can bring firearms through, but it's a mess of paperwork and I don't know the details. Better check first.
