Dear Rambi,

If you were baking something sweet, I'm glad you didn't bake your garlic in the same oven. Roasted garlic has a wonderfully nutty and sweet flavor, less harsh than raw or more quickly cooked garlic. We Italians love garlic in any form, but this is among my favorites. It is a treat simply spread on toasted Italian bread and sprinkled with salt.

Speaking of garlic, do you know to remove the green core from your cloves when cooking with it? Doing this will remove the bitterness and aftertaste.

Yes, my portfolio is taking another hit. It's mainly gorilla stocks, which I believe in, though my timing wasn't great in buying them.
