Marginmike....Although I don't know enough about CAKE and its biz....I can share this with you:

A good buddy of mine (and family) owns a premium dessert company (cheescakes, tirimisu, coffees, etc)...they sell to wholesales, hotels, and restaraunts around country (although not CAKE)..we spoke this weekend...he says biz has never been better....they continue to expand...why? Because desserts, high-end coffee are "affordable" luxeries....when times tough, people do cut back on the fancy vacations, fancy cars, etc....and INCREASE their consumption "affordable" luxeries...a form of substitution, if you will...

My buddy's company makes 25-30% GM..which is absolutely great for food...They get buyout offers all the time from the big boys....they say "nah", and every year, the offers go up (in price and number).....desserts can be a great biz..
