Thai Red Curry Baked Dolphin
Taken from Redbone Recipes

2 tbsp. Taste of Thai red curry paste
¼ cup coconut milk
¼ cup water
2 tbsp. fish sauce
1 tbsp. sugar
20 basil leaves, sweet basil
1 egg, well beaten
1 pound dolphin fillets
1 red chili, seeded and cut in strips
4 Kaffir lime leaves (optional), cut in thin strips

In a small bowl, combine red curry paste, coconut milk, water, fish sauce, and sugar. Mix well. Stir in shredded basil leaves and beaten egg. Top with optional lime leaves and red chili strips. Arrange fillets in a baking dish. Cover with red curry mixture. Bake 30 minutes at 375 degrees or until fish flakes to touch of fork.

Serving Ideas: Serve with Coconut Jasmine Rice

Coconut Jasmine Rice: 1 cup rice, 1 cup water, ½ cup coconut milk.
