I don't see how bringing all buying and selling interest together into a single price benefits the consumer any better than continuous pricing. Either way, there will always be someone who gets a better deal than someone else, and there will always be the possibility of someone with superior knowledge having the advantage in getting a better deal. There's no way for the buyer and the seller to interface directly as long as someone has to make the market.
