I use Chef Paul Prudhommes Magic Seasoning Blend--
"Blackened Redfish Magic" on Cod fillets after I brush them
with butter....very good.

Here's a recipe for Breaded Cauliflower

Steam Cauliflower till tender but crisp.
Dip steamed cauliflower in beaten egg, then into a mixture
of: 1 cup of flavored bread crumbs
3 tbsp parmesan/romano cheese
garlic powder

Put some melted butter in the bottom of a baking dish(just a
few tablespoons...add the breaded cauliflower and Bake
at 350 for 30 minutes

Here you go..Pecan crusted fish (You decide the type of fish you would like, how's that?)

Wash fish and spread with cajun mustard.. dredge in four beaten egg whites, then shake it in the mixture below...

1 cup cornmeal
1/2 cup grated Parmesan cheese
1/4 cup toasted sesame seeds
1 cup chopped pecan pieces
1 tablespoon garlic powder
1 tablespoon dry parsley flakes
1 teaspoon salt
1/2 teaspoon pepper
bake in lightly grease pan at 350 about 15 mins. per side..depending on the thickness of the fish.
