Did we break some Chinese law? Were we on Chinese territory when we did? What does privacy mean in China? Does China recognize the right to privacy? If so, where? And what recourse do people whose privacy right is violated have in China?

It is more than likely that the damage to the US plane was caused by the negligence or mistake of the Chinese jet which struck it. The US plane, which you claim to know very well, is not as fast or easy to move around as the jet.

Under the circumstances, the landing of the US plane on Chinese territory was done to save US lives. Why does the Chinese government treat this as an opportunity to dismantle the US plane?
