Did up a nice pork roast last night. Just in the oven, but I have also done them on the BBQ. I sprinkled it liberally with "Essence" a la Emeril, and a little water in the bottom to keep in moist while cooking. Came out great.

I freeze my steaks first. Then season and cook them. Charred on the outside and cold and bloody in the middle.

Fish cleaned right has no bones. I even filet Northern Pike boneless. I figure if a dummy like me can do it, for $15 a restaurant can get it right.
