Last night I tried the fried chicken I saw on TV. Easy and it was good. I used skinless, boneless breasts but it will work even better with regular chicken pieces.
Soak the chicken pieces in saltwater over night or all day. I added a little powdered garlic and powdered mustard. It's the soaking in saltwater that's important.

Take the chicken while still damp, pepper them and shake them in flour.

Heat vegetable oil and some butter in a skillet. Enough that it will come 1/2 the way up the meat. When the oil sizzles when you spit er drop a drop of water in it add the chicken. Don't crowd it or you will cool the oil. Cook 6 minutes covered, 9 minutes uncovered. Turn the pieces over and 6 minutes covered and 9 uncovered. Drain on paper towels. It was great both hot and cold.

Quick and easy recipe for fried chicken. I use Saltine crackers crushed up.

First is, I rinse the chicken and dry with a towel. Beat two eggs and dip chicken in, then dip in the crushed crackers. Place in heated veg. oil. I use an electric skillet and hear the oil to 325 degrees. Cook until a golden brown color and drain on paper towels.

I am going to look in my newest edition (May & June 2001)of Cooks Illustrated for your recipe. They have one called "The Ultimate Crispy Fried Chicken" Hang in there till I get a chance. Ever look at a Cooks Illustrated magazine? M

Can I add something to everyone else's recipes?---Parm/Romano cheese...just a few tbsps in the coating.
