One thing about frying fresh fish that we learned up in Northern Ontario, is that you should use lard instead of vegetable oil. We've tried it and it makes an incredible difference somehow. Mmmmm nice fish battered and deep fried...sound like I need to track down a fisherman.

Thanks. Posted a Chinese Chicken recipe yesterday. Does anyone use a pressure cooker on this thread? I have been using a Kuhn Rikon 5 Litre on for about 4 months, and it's amazing!
