I have to admit I have never had real cajun food other than buying "cajun" seasoning in the grocery store and fixing it up myself. Didn't like it at all. I am from the pacific NW and have never been to the south except to catch a cruise in Fl. Our goal it to visit the south, eat the food and drink the wine and booze. ;-) M

True story.

When Emeril was hired by the Brennen family, Kathy I believe, anyway, they didn't think his last name was right so they actually asked him to change it to it's present spelling and pronounciation.

His replacement is an Irishman! No luck in changing his last name. <g>

My beans come out ok but they don't taste like my Tante's beans at all.
