Yes. Enough said. Actually o.k. Reminds me of a picky eater,friend of my son when both were around 12. In desperation I asked, o.k. Matt what do you eat? Shrimp, was the reply. So I did my version of shrimp scampie for the kids, being careful to use less ginger root, hot pepper and garlic than usual, but normal amounts of lemon and soy. He never said anything about the seasoning because, I forgot that leaving the shell and heads with long antenna on, might be a problem. He took one look, told me he had forgotten something he had to do, called his mom and had her come get him. This is the same Matt that told me what a good cook I was when on another day, I made a ten minuet, 89 cent pizza for him. <g>

Yes, but I don't suck the heads. It doesn't do anything for me. I do look inside the shell to see if there is extra fat and if there is, I scoop it out with my finger and smear it on a cracker and eat that. Crawfish from someplace like Belle Isle, in the Atchafalaya basin, have a sweet flavor that comes from what they eat. The fat tastes sweet, too, sort of buttery, and spicy from the seasonings in the crawfish boil.

Sort of reminds me of the taste of crab eggs, which are really a delicacy. But if you eat the females then that cuts down on the breeding population, though, so up here when they catch female blue crabs in the Chesapeake they throw them back.

Some people do, some don't. Depends on their tastes. When I was young and trying to act all growed up, I did. Don't anymore, the tails too good and I want to get as many as I can!
