Tortellini in Chicken Broth

Speaking of ginger...try this.

For each serving, count on 2/3 c. home made chicken stock, and 6 fresh tortellinis. I usually make my own chicken stock, and find fresh, 4 cheese tortellini at the market.

Cook tortellinis according to directions, until al dente.
Put chicken stock in a small pot, and add 2 thin slices of ginger per 2/3 c. liquid. Bring to boil slowly, to give the flavour time to infuse. When it finally comes to a boil, reduce heat and simmer for 5-10 minutes. Add salt to taste. Remove the ginger and toss in the trash.

Put the tortellinis at the bottom of a bowl and ladle soup on top. Garnish with freshly chopped green onion/scallions and freshly ground pepper.

P.S. The kids love this too, but go light on the ginger, and hold off on the scallions and pepper.
