This recipe was adapted from one by Beverly Lyn Bennet. You can visit Bennet's Web site at veganchef.com .

Serves: 4

5 apples, washed and divided but not peeled
Lemon juice
1/2 C. celery, diced
1/4 C. raisins
3 T. walnuts, chopped
2 T. sunflower seeds
3 T. cashew butter
3 T. brown rice syrup
2 T. apple juice
1/4 t. cinnamon

Dice the apples. In a bowl, place the diced apple, drizzle with a little lemon juice, and toss well to prevent discoloration. Add the celery, raisin, walnuts, and sunflower seeds, and toss gently. In a small bowl, combine the cashew butter, brown rice syrup, apple juice, and cinnamon, and stir until well combined. Add the cashew butter mixture to the apple mixture and toss gently.

You missed the free dimsum at my restaurant. Now you have to wait a whole year!
