My Chili-

Melt a quarter stick of butter in a pan, simmer in a handfull of garlic and discard the garlic.

Mix 1 cup of flower with 2 cups of chili powder.

Roll 1 pound of chunks of Chuck Roast in the flour and brown in the butter. Toss in the slow cooker.

Roll 4 pounds of chunks of round in what's left of the flower mix and brown. Toss in the slow cooker.

Go to the store and grab one handful of peppers from each of 3 bins, no, green peppers don't count. Seed 1/2 and chop them all. Y'all need gloves here. Toss them in.

Chop a big tomato and onion and toss them in.

Add some cumin seeds, oregano, coriander, dash of sugar, salt.

Stir once in a while. Add beer, a can of the good stuff. A 1/2 cup of beef broth doesn't hurt.

Day two, keep stirring, sprinkle on some cayenne.

Day three add some crushed red peppers. Stir.

Day 4. Serve over rice with grated cheddar cheese on top to cool it.
