My first cup of the morning is always a strong Assam which I take with milk and sugar. (I never had tea with milk until I was in England on a bicycle trip and stopped off at a roadside stand for a cup of tea and he handed it to me already dosed with milk and sugar and I was too shy to complain so I drank it and found I really liked it.) After that, I drink the rest of the day's tea straight. My second cup is usually a Keemun or a Congou, or sometimes a Yunnan. I have discovered the best Congou -- Jiangxi Province Ning Hong Jing Hao. Have no idea what it all means, but it's a totally delectable mid morning tea. In the afternoons I tend more to match my tea to my mood. Usually I have at least one cup of one of my three favorite Darjeelings. Some days I'll have Baker Street Blend, one of the few blends I buy, which has a touch of Lapsang in it. I don't like pure Lapsang, but this is a blend of Lapsang, Keemun and Darjeeling, and is a good change for an afternoon pick-up. Some days I'll have green tea, either a straight green (sometimes a gunpowder, sometimes a Hyson, less often an Sensha. I stay away from the vegetals, which I really don't like. Just depends on my mood at the time.

I find that Red Zinger, which I keep on hand for those clients who prefer an herb tea (I always have about half a dozen herb teas for clients, such as Red Zinger, Orange Spice, and Camomile, which I detest) ruins my palate for the rest of the day. Somehow the combination of green tea and Red Zinger appeals to me about as much as putting hot fudge sauce on lemon meringue pie.
