Most practicing Jews at all times - certainly then - have been able to read Hebrew (Aramaic) if they could read at all. That's why so many Jewish works have been preserved.
If they had been written by Jewish followers, for Jews, that would have been the language used. Religious activists of a messianic Jewish cult would surely have been more likely, not less, to read and write the language of their holiest works...?
If they were *originally* written in Greek, they were written certainly FOR and most probably BY Gentiles - non-Jews.
