I think the dressing would go well with larger vegetable items, such as artichokes and asparagas and the like, tossed with roasted peppers. Could almost use it as a marinade for these vegetables.

I think the fruit with spinach is a splendid idea. Perhaps toss in a touch of slivered almonds?

i put blueberries, strawberries, almond silver and red onions with my spinach and use a fairly basic oil/sugar/vingear with hot sauce dressing...love it!!
