'I had some poutine when I was in Nova Scotia, and it was vile.-ng'
LOL. Yes I got a good chuckle when it became 'trendy' here in Ontario (born and raised in Quebec) but the other side of the coin is that Quebecers got 'nachos and cheese(?)' about the same time. :0)

'a lot of the French people from Canada and Maine moved down there after that little war'
Many many were 'encouraged' by the British after the British took Acadia to 'move'. Funny how watching the old homestead light up the night sky will do that. The British were never successful at assimilating the French whether from Acadia, Canada or apparently the Louisiana settlers.

'I think we got all the good cooks, too.' Don't know about that. We've vacationed often in the Maritimes and have always eaten very well but now you've got me humming Hank Williams Jambalaya :0)
