If you use a big retail outfits like Wal-Mart or a grocery store chain to get your money orders it can be completely anonymous. Some make you sign a book, but they don't ask for identification. After $2500 (approximately maybe $3000) the government requires reporting. Wal-Mart and the like won't let you go over $2500 and banks won't let you go over that amount unless you have an account with them. However, it is easy enough you want more to simply go to two different places.
