The chef that gives the andouille recipe on that site is John Folse who hosts the Taste of Louisiana show on PBS. He tours B&Bs in Louisiana and gives the history of the homes and families who have owned them along with his cooking. He has an interesting accent and if he couldn't say nice and ya'll the show would only be 10 minutes long.

For casings you could try a local meat shop or slaughter house. Both places make their own sausages.
