Scored, fried carp isn't bad from cold water.

Catfish

2 teaspoons sweat paprika
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon cayenne
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
2 catfish filets
1 clove of garlic sliced thin
1 tablespoon of olive oil
1 tablespoon of unsalted butter
lemon wedges

Mix the dry stuff and rub on the filets
heat the olive oil and and brown the garlic
remove the garlic and add the butter
cook the catfish about 4 minutes on each side
squeeze the lemon on and eat.
