That is close to the recipe I used... didn't get the amount of thyme in it because the pores of the seasoning container I put the seasoning mix into were too small. (I have a salt shaker with 1/4 inch holes into which I put all the spices to season the sausage meat) Didn't catch it until the sausage meat was already in the casing. Also, I cut the hot pepper in half for my wife.

And I smoked it for around 3 hours, same temperature on apple wood.

And I am cooking some with BLACK beans right now... tastes fantastic but needs some salt???

And I froze the rest of the sausage...

Thanks, now I won't have to go back to the site I posted here that gave Chef Folse's andouille recipe.

BTW, on his show he buys it.
