One is, if I have removed the Preview option, and just right click the message in the inbox (which does highlight it), does the message send a receipt anyway?

no

The second is, does the second part mean that if I instruct, under Options and Receipts, that a Read receipt never be sent, do you think that would fool the spammers into thinking i'm a non-live address?

I have never seen a spammer request a read receipt. If you have the default choice checkmarked as such you should never sent a receipt request unless you want to.

If you do get a request and have it set up like i do in the .gif above, here's what will happen when you double-click the message to open it.
