Yes, he does say that hog fat is the best, I just didn't know if you had found something else or if you use a combination.

I was really surprised to see that in homemade sausage, there's less fat than in the sausage you buy in the store....like you said, he's got that section covered in the book.

Fat back is in abundance in our local store. I only used it before to cook my black-eyed peas with...now, there's another use!
