Fantastic... on the other hand, my other book, aptly named "The Sausage-Making Cookbook," calls for Quatre-Epices, a blend of 4 spices which results in something like a pie spice. THAT combo is used in the French Boudin sausages and you cannot really taste them... but they give a wonderful background to the sausage taste.
