There are between 10 - 20 of them that I can find... I think the market is glutted, considering the demand.

I am guessing here, but if I were a meat producer, I wouldn't want it to get around how great sausages really are... why it could cut demand for meat by 10-25% or more... especially beef (remember: What's for dinner???)

Why would demand go down? Because many great tasting sausages, including the hot dog, have at least 25% filler and are made of less desirable cuts of meat.

Another guess is that the average American probably eats less than 5 lbs of sausage annually... in Europe, I am told, it is 50 lbs or so. Ours mostly is in breakfast sausages...

And why do sausages cost $5.00 a pound or more??? Incredibly, except for our labor, we can probably make them for less than a dollar a pound.

(I am having those chicken-apple sausages for breakfast this morning... yum!)
