Some of them looked good......

Here's the first

Old Bay Sausage

4 feet small (1 1/2 inch diameter hog casings)
2 lbs whitefish fillet, thawed if frozen
1 egg, beaten
1/2 tsp celery salt
1/4 tsp crushed mustard seed
1/4 tsp finely ground black pepper
1/4 tsp ground bay leaf
1/4 tsp ground cloves
1/4 tsp ground ginger
1/4 tsp mace
1/4 tsp cardamom
1 tsp sweet paprika
1 tsp lemon juice

1. Prepare the casings.
2. Cut the fish into two inch cubes and process in a food processor until the fish is broken, about three on/off cycles.
3. Add the remaining ingredients and process just until everything is well blended.
4. Stuff the mixture into casings and twist off into three to four inch links.
