Hi!

I actually have a recipe concept to share.
I say concept because it is not totally precise
and can be altered to suit your tastes.

Preheat oven to 500 degrees.
Choose halibut or seabass.

Chop up enough fennel to basically form a nice
bed on the bottom of a 9x11 pan. (I generally use
pyrex). This would probably take 3 good size bulbs
of fennel.

Chop some brown onions. The amount depends on your tastes.
I usually use about a cup to three fennel bulbs.

Spray some cooking spray on the bottom of the pan before
you put in the onions and fennel. Then pour some olive oil on top of the vegetables. Salt and pepper to taste. I throw in some fennel seeds too. Mix it up.

Place pan in the oven, stirring occasionally. The point is
to soften the vegetables. Usually takes about 15 minutes.

Season your fish filet. Spray with cooking spray or olive oil.

Place fish on top of the vegetables. It will take at least 15 minutes to cook the fish. Just watch it.

You can also make croutons for this.
Cut some french bread into cubes and spray with cooking spray or olive oil. Season to taste. These can be baked on
top of the fish. Probably doesn't take more than 10 minutes or so for the croutons to toast, so you put them in after the fish.

When ready, serve the fish on the fennel/onion base and top with the croutons.

Baby carrots in butter go well with this as a side dish.

This makes a great feast for two. You will find that you want a good portion of the fennel and onions. It's very yummy.
