Oh yes, I've had that also, in France. As a cold appetizer, it is disgusting. But in Jambalaya, it mixes well with spices and is quite good (if you don't know what you're eating). I think it's made from pig intestines and tripe.

ahhh... but then there is that Scottish stuff - the one made in the sheep's stomach - haggis . I thought it was oatmeal ,in this lovely inn in the English countryside.
There is a recurring theme here in my posts I realize....I've got to stop tasting things that have not been previously identified to me by name.....
