I love tapioca (in my house "fisheyes and glue"). Your grandma's recipe for floating island is different from any I've heard, with the addition of the currant jelly. It sounds like a wonderful addition.

All of these dishes are true comfort foods.

That makes me want to make floating island right this minute, i haven't had it for ages. But the trick is that the clouds of beaten egg whites are first poached in milk, then put aside and floated on the custard, in the making of which the poaching milk is of course used; and the custard must be a creamy custard rather than a stiff one of the creme brulee type. I insist.

I wonder how it would taste if the custard were made with Egg Beaters and skim milk?
