I can't see why it wouldn't work as a rice pudding, too, except that a good italian bread (the coarse kind-- the big round loaves, or the flatter round loaves like terranova) has its own flavor, and it's more distinct and 'richer' than the flavor of rice, i think.

I've made it with chunks of peeled green apple, too; but we like it best with dates.
