No pork, no shellfish, no blood, no mixing of milk and meat, these are among the principal rules of keeping kosher. The argument between Peter and Paul was over whether gentiles had to conform to the ritual law, or whether they could be received into the church without becoming Jews first.......

"I do remember that Jesus said that it didn't matter what a person put in his mouth, but what came out of it did matter."

I think that was Paul. He didn't say it didn't matter, he said one should be more concerned with the latter. It was regarding an incident where an argument ensued over whether or not some food was Kosher. The point as I understand it, was similar to the message of Jesus throughout the new testament. Not that the laws aren't important but that they should not be applied in a manner that oppresses or sacrifices the spirit of brotherhood.
