At least they can make it sound good, which in their business is half the battle. If the description of the food sounds sufficiently snooty and the food is sufficiently expensive, an amazing number of people will convince themselves that the food is good, even if it's not.

One thing I like about the Swiss fellow's restaurant referred to in the previous post is that the descriptions are really quite minimalist. A broiled blue marlin steak is called exactly that, without embellishment. It's also good, which helps.
