Most companies I know try to keep business going during the summer, although two of our suppliers actually shut down for three weeks every summer.

The Red Hat Network automatically applies patches, and I haven't seen any problems reported with that. I heard of many problems with applying Microsoft patches to web-servers, which is also the main reason why Windows-based production web-servers seldom get patched without prior tests.

Re: SUNW, I watch a few FreeBSD lists, and they often talk about what's available on Linux, but not available on FreeBSD. FreeBSD is still the record holder in uptime on webservers, and has a historically strong position, but it will become much less important. So will other Linux-incompatible Unix solutions, it will just take some more years.
