No, not road kill 'possums. It's all donated wild game. Elk, moose, lots of deer, antelope, bear, squirrel, rabbit, pheasants, duck, goose, raccoons and 'possum. Some cuts require more sauce than others. Oops, needing a lot of sauce, we can't forget beaver.

It's all checked by a USDA meat checker before being cooked.
