The tofu itself is quite fresh. The brine it is soaked in is about 6 months old, although there are efforts to modernize the process: confex.com It is a Chinese delicacy that usually ranks right up there with sea slugs and duck feet on foreign visitor appreciation lists. It is actually pretty tasty, but most people can't bear to get within 50' of the wok (unless fortified by mass quantities of beer). Going to Mudd's sounds like fun.
