The 22 analysts making Intel's EPS projections are familiar with all the same pitfalls that you just mentioned. We all know that analysts make mistakes (and often!), but the general consensus among 22 of them covering INTC is that their EPS will be somewhere between $0.46 and $0.55 this year (average is $0.51, actually). 16 analysts covering AMD figure that their EPS for the year will be between $0.17 and $0.48. It should tell you something when the most optimistic analyst for AMD is only slightly more confident than the most pessimistic analyst for INTC.
