I went to a home show yesterday afternoon. (Been to a lot of these lately while planning our new home.) The first house I went in - 5,000 sq. ft. for $675,000 - had plastic plumbing and after our discussion yesterday, I had to ask the builder which he preferred.

"Hands down, no comparison, plastic," he said.

When I asked him why, he answered. "I can make you a list!"

He then spent several minutes going over several of the things we have talked about. One I didn't mention yesterday was that the hot water arrived much quicker as it didn't have to travel through larger diameter pipes. Also he pointed out how you can turn off each faucet at the manifold, rather than having to turn off the water completely.

Of course the point for this thread is whether the switch of some builders to plastic will hurt the demand for copper. I think the answer is a clear yes - only the magnitude is in question.
