More to the point, and far from a new idea, humans adapt via a combination of biology, like all other species, and culture. The culture aspect buffers the impact on the biology, relaxing selective pressures on the genes. To some extent, we are creating our own environment and thus are insulated from the one around us. Note that this does exclude the possibilty of us munging things up so badly that we exterminate ourselves, but in the meantime we have that combined response.
