The nproblem with gas for me is that it seems to me that the effect on different age and health groups could cause nedless death to many innocents. Really, I do not know the safety range of whatever nerve gasses may be around, but my inclination is to suspect that a dosage certain to disable all would be a certain death sentence for many. I may be wrong.

No it's easier than that. Simply depressurize the cabin. Everyone will go unconscious. It is relatively safe and will have low collateral risk (except maybe some weaker people on board).
