Have you never known something would happen because you understood the players involved? You can predict many outcomes and responses of individuals, even with limited information, intellect, and insight. (Don't take that as a personal insult, but rather in comparison to what God, if there is one, knows). When a child responds to certain treatment in a particular way and you saw it coming, did you pre-determine the child's response? Those categories are not mutually exclusive. Even so, the idea of predestination and ultimate sovereignty of deity is not about us or our freedom. Rather it seeks to convey the idea that in the end the primary purpose or plan of God for the universe will not be thwarted by either human freedom, rebellion, or disinterest, or some opposing power of greater magnitude than we possess. We have lots of freedom within that larger purpose. You could look at it like a cruise ship. The passengers do any number of things, with any number of attitudes during the cruise, but the ship sails to the end destination just the same. It is not a perfect analogy, but allows for other possibilities than your strict determinism.
